Eggs Benedict is a dish that consists of English muffin (or any similar bread), topped with ham or bacon, poached eggs, and the special hollandaise sauce. The first time I had this wonderful breakfast dish was at Coffee Bean many years ago. I like eggs, ham, bacon a lot and anything creamy therefore making it my instant favorite.
Couple of years later I came across a store selling instant Hollandaise sauce. I didn’t buy it since it was rather pricey and decided to make my own sauce. After searching around, I’m surprised that it was actually very simple to make. Hollandaise sauce is an emulsion of butter and lemon juice using egg yolks as the emulsifying agent. All the ingredients are commonly used and available.
Set aside 2 egg yolks, a little bit of UHT cream (optional), and white grounded pepper in a bowl. Then simmer the bowl on hot water over a pot with fire set to minimum. You need quite a lot of butter. I used about 50gram. Melt the butter on a pan.

Add in the melted butter into the bowl slowly while whisking the mixture. Add 1-2 teaspoon of lemon juice and continue whisking until the sauce thicken. Salt to taste and you have just make your own Hollandaise sauce!

After the sauce is done, the rest of the stuffs is basic. I used normal white bread since I couldn’t find English muffin. Coffee Bean use pita bread. Toast the bread, lightly pan fry the ham and make the poached eggs. To make nice poached egg you need deep water and white vinegar added to the water. I didn’t use enough water therefore my eggs look “flat”.

Put the bread on a plate, follow by the ham, then the poached egg and finally top it with the Hollandaise sauce. Pepper and parsley for garnishing. Super yummy!!!
