28MayBraised Turnip with Dried Shrimp

Turnip is high in dietary fiber and a vital source of vitamins. This particular dish using turnip, dried shrimp and chicken cutlets was introduced to me by my grandmother. Every year during Chinese New Year, she will make this dish as one of the many dishes for the traditional family reunion dinner.

I like it very much especially using it as the filling and go with fresh lettuce. For some reason, I do not know why my parents seldom or never make this at home so I always long for the annual reunion dinner all year long. Now that I started to learn cooking, this dish is definately on my to-learn list since it is my favorite.

I bought a small turnip and it could easily turn out a 4 pax dish. Chop it to tiny sticks like french fries size, the smaller the better.

I modified a little bit by adding dried cuttlefish in addition to just dried shrimp to give it the extra oohhmpp in flavor. Pre-soak the dried cuttlefish and shrimp prior to cooking.

Stir fry the dried shrimp and cuttlefish till crunchy then set aside before cooking the rest of the ingredients because I wanted to maintain their crispness to go with the soft turnip. Next, I use prawn instead of chicken and I think any meat will do just fine. Do a quick stir fry to semi cook the prawn then side aside.

Using the same oil from stir frying the ingredients, I throw in lots of garlic then follow by the turnip which was cut into smaller stick. Put lots of water and braise it till it get soften and absorb all the flavorful juice. Then season it with salt, pepper, soya sauce and little bit of oyster sauce. Throw in all the ingredients we set aside earlier and do a quick mixing before serving it.

It was my first try and the outcome is pretty satisfactory and we enjoy it very much.

    haha janice. in actual fact, I only used half of the turnip that day. the other half is still in my fridge hopefully it can last… :((

    :)wow wow.. all that yummy looking food.. i wanna learn!!!! lol. so i can cook for GDEAD!!! ahahahaa.
