09JunBoiled Honey Dew Dessert

I recently came across this dessert in one of the restaurant and like it very much after I sampled it. Is actually quite simple to make so I decided to gave it a try and made it at home. This dessert is similar to the 8-treasure dessert which I have had many times with the exception of the extra honey dew used as one of the ingredient.

The thing about this dessert is that you can never go wrong when you have the right base ingredients and you can mix and match around with the extra. The dried longan and sugar stone itself form the base of the taste which is good enough.

I used the usual ingredients such as snow fungus, ginkgo nuts, red dates, dried longan and sugarcane sugar stone.

All the stuffs are easy to prepare except for the ginkgo nuts which is quite a chore to crack and peel. For some reason, the batch of ginkgo nuts that I bought and pack vacuumed started to grow some spores. And many of them dried up or started to rot on the inside after I crack them. I only bought them fresh like 10 days ago. In the end, I could only savage like 40% in total.

As for the special ingredient, the honey dew. I cut the ripe soft portion of the honey dew into medium size cube and boil them earlier. Then I cut the hard part that form the outer part into tiny pieces and only throw in these towards the end of the boiling so that you get a mixture of crunchy and soft honey dew.

I throw in some sea coconut for extra kick. Peel, chop and marinate with sugar water overnight. Quite a chore, I think next time I just buy off the shelve ready-to-eat type.

Boil everything together for 2 hours or until you get the softness you desire and you get a simple and cooling dessert. You can either serve it hot or cold. I prefer it to be icy cold!

I have some left over honey dew after making the dessert so I made some honey dew juice mix with lots of condensed milk!
