30AprLotus Root and Peanut Soup

Lotus root soup is a simple, warm and nice soup to make. Some people use corns as the second main ingredient while I prefer to use peanuts since I like to chew on softened peanuts. I always boil the peanuts on a separate pot for 5-10 minutes then discard the water before adding in the peanuts back to the main pot in order to reduce some coloring. This is to prevent your soup from becoming too murky or dark brown in color. Continue reading ‘Lotus Root and Peanut Soup’
